Chocolate muffins with goji berries, cranberries and fresh orange zest with dark chocolate coating

Making your own cake is a true joy when the weather gets cooler. While waiting for Christmas let's try and get aromatic muffins - a sweet favourite on our table. Together with a Sencor food processor let's try and prepare something dainty that gets to the very bottom of your heart with how it looks and its taste.

Ingredients:


Servings: 6

Dough
  • 60 g plain flour
  • 80 g dark chocolate
  • 35 g sugar
  • 75 g butter
  • 2 eggs
  • 1/2 tsp baking powder
  • 1 tbs cranberries
  • 1 tbs goji berries
  • 1 tsp grated orange zest

Dark chocolate topping
  • 50 g dark chocolate
  • 3 tbs icing sugar
  • 1 tbs butter
  • few cranberries, goji berries and tsp grated orange zest for garnish

Preparation:


Dough
Put butter, sugar and chocolate into a pan.

Put a frying pan on a low heat, combine the ingredients and then set aside. (be careful - don't boil the mixture).

Put the prepared mixture into the food processor to mix all of the ingredients.

Add previously mixed flour and baking powder, mix for some time, then add eggs and continue mixing.

At the end, use the spoon to add cranberries, goji berries and orange zest. Put the dough into the baking trays to 2/3 of their height.

Put muffins into a preheated oven of 160°C degrees and bake for about 20 - 25 minutes.

It is good practice to take out a muffin and check it with a wooden stick to see if it is dry inside; if not, keep baking for another 5 minutes.

Set aside after taking them out of the oven.

Top the cooled muffins with a dark chocolate coating, garnish with cranberries, goji berries and orange zest. 

Coating
In a pot combine the dark chocolate, butter and icing sugar.

Keep on a low heat until combined (be careful and do not bring them to boil).
