Oatmeal cheesecakes

Mini cheesecakes as a healthier and quick option that you can serve as a sweet dessert, breakfast or a comforting supper.

Ingredients:

 
  • 250 g full fat cream cheese
  • 1 tbs honey
  • 1 tbs orange juice
  • 1 tbs vanilla extract
  • 2 eggs
  • 4 hearty tbs plain yoghurt
  • 1 nearly full glass of mountain oats or plain oats
  • 200 g tangerines
  • a handful of nuts

Preparation:


Put cream cheese into a container and process until smooth. Add honey, orange juice, vanilla extract and eggs and process again. Add plain yoghurt together with oats and mix with a spoon. Put the mixture into heatproof trays, add pieces of tangerines and top with chopped nuts and flatten.

Bake in 180°C degrees oven (oven fan mode) for about 25 - 30 minutes. Top with icing sugar before serving.
