Gingerbread with red beans

Gingerbread should be sweet, aromatic and...not necessarily heavy! You can prepare it with beans. And now our favourite traditional cake as a healthy option. Even if you are suspicious, you have to try it - you will not leave even a bit!

Ingredients:

 
  • 320 g cooked red beans
  • 50 g whole-wheat flour
  • 5 eggs
  • 3 tbs cocoa
  • 1 tbs cinnamon
  • 1 tbs ginger spice
  • 1 packet of nut mix
  • 1 handful of dried cranberries
  • 1 handful of physalis
  • 3/4 glass of brown sugar
  • 5 tbs honey
  • 1 tbs vanilla extract
  • 1 tbs baking soda
  • 1 tbs baking powder
  • 6 tbs olive oil
  • 1 glass of plum marmalade
Gingerbread with red beans

Preparation:


Set oven to 170°C. Put cooked beans into a food processor and blend until smooth. Add sugar, eggs, honey, olive oil, vanilla extract to bean pulp. In a separate bowl combine flour with baking powder and baking soda, add cocoa and spices. Add dry ingredients to the wet ingredients. Chop nuts and cut physalis into halves. Add nuts, cranberries and physalis to dough and stir carefully.

Spread a baking tray of 20 cm diameter with butter and put dough in it. Bake in the oven pre-heated to 100 C for an hour. Set aside to cool down. Cut into 3 pieces, spread with plum marmalade and garnish with cranberries.
