Pistachio pralines

Excellent idea for a snack or a small gift for a friend or the family. Can be a pleasant gift if distinctively wrapped. There is nothing better than a heartfelt gift.

Ingredients:

 
  • 100 g white chocolate
  • 100 g mascarpone (room temperature)
  • 50 g grounded pistachio nuts + for topping
  • 1 tbs lemon juice
  • grated lemon zest (half of lemon)
  • 1 tbs almond liqueur
Pistachio pralines

Preparation:


Roast pistachio nuts and cool down. Break chocolate into smaller pieces, melt in a water bath and set aside to cool so that it is still a liquid. Mash mascarpone with a spoon to make it softer. Add chocolate and stir it in. Pour sizzling water over lemons, grate the zest and squeeze the juice. Add it to the mascarpone mash, add liqueur and stir. Put pistachios into the food processor and mix until the mixture looks coarse. Add to the mash and stir. Refrigerate for one hour.

Chop or lightly blend the nuts you want to use for the topping. Take the mash out of the fridge. Using the tablespoon form small balls of the mash (put a little oil on your hands to avoid the mash sticking to your fingers). Roll it in the pistachios. Refrigerate for one hour. Wrap pralines.
